It\u2019s a <strong>dry<\/strong> wine, not sweet, and it\u2019s the <strong>characteristic<\/strong> grape from the Langhe which is <strong>well disseminated<\/strong> in this area. The first documents that talk of this vine variety date back to the 1500s.<\/p>\n<p>It is drinkable on a <strong>daily basis<\/strong> and it can also be preserved for a certain length of time.<\/p>\n<p>The <strong>territory<\/strong> is typical of the Langhe; a territory with <strong>a very high wine vocation<\/strong>. It was formed many millions of years ago as a result of the sea level rising.<\/p>\n<p><strong>Monforte<\/strong> is an<strong> exclusive terroir<\/strong>, like the well-known Barolo from Monforte, yet the Dolcetto too has found its <strong>ideal habitat<\/strong> here.<\/p>\n<p>The vineyard aims at the <strong>quality of the grapes<\/strong>, because, clearly, a great red wine is created mainly in the vineyard.<\/p>\n<p>This beautiful phrase &#8220;\u2026 if you want a good glass of wine, buy a vineyard.\u201d by Arturo Bersano is quite indicative.<\/p>\n<h3>The work in the winery<\/h3>\n<p>&nbsp;<\/p>\n<p>We should also add that the vineyard is maintained via a system that <strong>protects the environment<\/strong>, through integrated pest control; it has a low yield per hectare and is harvested on average in early September.<\/p>\n<p>The winery simply <strong>enhances<\/strong> what was created in the vineyard; as a result the <strong>fermentation<\/strong> is regular with a brief maceration period and the wine is then preserved in stainless steel.<\/p>\n<p>It\u2019s <strong>a table wine<\/strong>; a wine that develops fruity features, a typical characteristic of the vine.<\/p>\n<h2>Sensory analysis<\/h2>\n<p>Well now, at this point, we should try tasting it.<\/p>\n<p>I repeat, this is a dolcetto d&#8217;Alba, <strong>vintage 2016 a great harvest<\/strong>, Cascina Gramolere, Monforte d&#8217;Alba.<\/p>\n<h3>Color<\/h3>\n<p>Let\u2019s start with its visual appearance. It has a magnificent and <strong>intense purplish red color<\/strong>, perfect chromaticity, intensity and tonality; a truly <strong>inviting color<\/strong>.<\/p>\n<p>The viscosity is perfect, as are the tears. I would add that it\u2019s a <strong>very pristine wine<\/strong>. So let&#8217;s say that, on a visual level, I\u2019d give it <strong>full marks and due praise<\/strong>.<\/p>\n<h3>Aroma<\/h3>\n<p>Now let&#8217;s move on to the most interesting aspect, the <strong>olfactory aspect<\/strong>.<\/p>\n<p>To the nose the Dolcetto is characterized by <strong>fruity aromas<\/strong> and sweet fruit. They are the <strong>primary bouquets<\/strong>, linked to the vineyard and the alcoholic fermentation, which develop these wonderful scents, these <strong>fruity-sweet notes<\/strong>.<\/p>\n<p>The general rule is: <strong>white wines<\/strong> &#8211; <strong>white flowers<\/strong>,<strong> red wines<\/strong> &#8211; <strong>red fruits<\/strong>.<\/p>\n<p>This dolcetto allows us to easily perceive hints of <strong>black cherries<\/strong>, <strong>currants<\/strong> and <strong>raspberries<\/strong>. These are, I repeat, primary bouquets which over time develop towards <strong>more complex notes<\/strong> of ripe fruit and also some <strong>slightly spicy<\/strong> notes.<\/p>\n<p>Its aroma is <strong>frank<\/strong>, of absolute intensity, of<strong> great finesse<\/strong> and also of great persistence.<\/p>\n<p>La <strong>regola generale<\/strong> \u00e8 queste: vino bianchi &#8211; fiori bianchi, <strong>vini rossi &#8211; frutti rossi<\/strong>.<\/p>\n<h3>Flavor<\/h3>\n<p>Let&#8217;s now take a look at the taste aspect. To the palate it is <strong>well-balanced<\/strong>, <strong>warm<\/strong> and <strong>dry<\/strong>, contrary to its name (dolcetto-sweet).<\/p>\n<p>It has <strong>great harmony<\/strong>, a good balance. The <strong>acidity is limited<\/strong>, the tannins are practically non-existent.<\/p>\n<p>This wine goes well with good food, but then again it<strong> should be savored young<\/strong>, even as soon as the summer following the harvest.<\/p>\n<p>It should be served at <strong>16\u00b0 C<\/strong>, in <strong>large glasses<\/strong> (as shown in the video), or even a common wine glass, the <strong>ISO glass<\/strong> is perfect.<\/p>\n<p>I would say that it\u2019s a versatile wine to be savored throughout the <strong>entire meal<\/strong>, except for desserts. So, of course, it goes well with the <strong>Piedmontese<\/strong> <strong>cold cuts<\/strong>, <strong>vegetables<\/strong> and <strong>eggs<\/strong> <strong>appetizers<\/strong>.<\/p>\n<p>It also goes marvelously well with main <strong>pasta dishes<\/strong>, especially <strong>tajarin<\/strong>, <strong>ravioli<\/strong>, <strong>risottos<\/strong>, but it is also ideally paired with a <strong>cheese platter<\/strong>, <strong>steaks<\/strong> and <strong>grilled<\/strong> <strong>meat<\/strong>.<\/p>\n<p>I would say that it\u2019s <strong>an ideal wine for many occasions<\/strong>.
