It\u2019s considered the King of wines and the wine of Kings, but I prefer to call it <strong>a jewel of world enology<\/strong>, because Barolo, I repeat, does not fear any comparison.<\/p>\n<p>And this, above all, is a Barolo from <strong>Monforte<\/strong>, a <strong>terroir with a very high vocation<\/strong>.<\/p>\n<h2>The vine<\/h2>\n<p>As always, we start from the vine: the <strong>Nebbiolo<\/strong>. It is <strong>ancient<\/strong>; it arrived in 1266 but then over time it managed to find<strong> its exclusive habitat in the Langhe<\/strong>: an area with \u200b\u200b11 municipalities and 2,000 hectares, the Barolo DOCG area.<\/p>\n<p><strong>Monforte is one of the most suitable terroirs<\/strong>.<\/p>\n<p>It goes without saying that the <strong>territory<\/strong> here has a very high vocation; a territory that was <strong>formed 150 million years ago<\/strong> as a result of<strong> sea level rising<\/strong>; a land rich in <strong>marls<\/strong>, <strong>limestone<\/strong>, <strong>clayey<\/strong> <strong>marl<\/strong> and Monforte is particularly rich in <strong>microelements<\/strong>.<\/p>\n<p>These elements, this terroir, mean that the vine finds its maximum habitat here and provides <strong>high quality products<\/strong>.<\/p>\n<p>Nebbiolo gives rise to the great Barolo.<\/p>\n<p>The vineyard, needless to say, <strong>fully enhances the quality of the grapes<\/strong>; as a result <strong>sustainable agriculture<\/strong> is possible along with integrated pest control and a low yield per hectare.<\/p>\n<p>Nebbiolo <strong>grapes are picked late<\/strong>, when the mists arrive, hence the name, and it usually has a late ripening period, towards the end of October and early November.<\/p>\n<h3>The work in the winery<\/h3>\n<p>The <strong>winery<\/strong> does nothing more than <strong>enhance<\/strong> this great wine, in the sense that the <strong>fermentation period is long<\/strong> and so are the macerations.<\/p>\n<p>Barolo must be <strong>preserved in wood<\/strong>; here <strong>Claudio<\/strong> uses <strong>large Slavonian oak barrels<\/strong>.<\/p>\n<p>Barolo can continue having an <strong>aging period in bottles<\/strong>, so as to refine those great aromas that make it truly <strong>unique<\/strong>, <strong>all over the world<\/strong>.<\/p>\n<p>In summary, a great wine from a great territory.<\/p>\n<h2>Sensory analysis<\/h2>\n<p>Let&#8217;s have a look at the guided tasting of this wine: Barolo 2012 Monforte Cascina Gramolere.<\/p>\n<h3>Color<\/h3>\n<p><strong>Garnet red<\/strong>, remarkably beautiful with its <strong>nuances<\/strong> and the <strong>viscosity<\/strong> is <strong>perfect<\/strong>, as are its tears.<\/p>\n<p>It is clearly a <strong>very<\/strong> <strong>pristine<\/strong> wine.<\/p>\n<h3>Aroma<\/h3>\n<p>Now let&#8217;s go to the famous <strong>goudron<\/strong>, the nose, to discover Barolo\u2019s <strong>scents<\/strong>.<\/p>\n<p>There are <strong>tertiary<\/strong> <strong>fragrances<\/strong> of the<strong> highest level<\/strong>, great <strong>finesse<\/strong>, and an immense <strong>souplesse<\/strong> profile.<\/p>\n<p>Clearly notable are the spicy aromas of <strong>white pepper<\/strong> and <strong>cinnamon<\/strong> which then evolve over time into <strong>black truffle<\/strong> nuances and <strong>tobacco<\/strong> notes that make the Barolo such a great wine. The aromas here are truly at their <strong>highest level<\/strong>.<\/p>\n<p>These fragrances are linked to <strong>fermentation<\/strong>, the cellar and also partly to <strong>wood<\/strong> and to the <strong>evolution of the wine<\/strong> over time, even in the bottle.<\/p>\n<h3>Flavor<\/h3>\n<p>Barolo is a complete wine, <strong>full-bodied<\/strong>, <strong>warm<\/strong>, <strong>balanced<\/strong> and of <strong>great persistence<\/strong>.<\/p>\n<p>Barolo fully expresses the <strong>vine<\/strong>, the <strong>territory<\/strong>, the <strong>Langhe<\/strong> region, the <strong>viticulture<\/strong>, the <strong>winery<\/strong>\u2026 basically everything.<\/p>\n<p>Barolo also expresses <strong>great sensations in the mouth<\/strong> that make it a remarkable wine for a unique sensorial gratification.<\/p>\n<h2>Serving and pairing<\/h2>\n<p>Its <strong>warmth<\/strong>, <strong>structure<\/strong>, persistence over time and length make it a wine that clearly should be <strong>valued in the right glass<\/strong> at the right temperature.<\/p>\n<p>The bottle should be opened half an hour prior to drinking, in <strong>large glasses<\/strong> such as the balloin, the huge ISO, a large glass which allows it to develop its great features.<\/p>\n<p>Needless to say, at the dining table it should be enhanced with <strong>important meat<\/strong>, <strong>game<\/strong> or <strong>braised<\/strong> <strong>meat<\/strong>, but also with <strong>aged cheeses<\/strong>.
